Ingredients:
- 2 cups basmati rice

- 2 tablespoons ghee or oil
- 1 onion, thinly sliced
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 2 bay leaves
- 4-5 whole cloves
- 2-3 green cardamom pods
- 1 cinnamon stick
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- Salt to taste
- 1 cup mixed vegetables (carrots, peas, bell peppers, etc.)
- 1/2 cup plain yogurt
- Fresh cilantro and mint leaves for garnish
- Fried onions (optional)
1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
2. In a large pot, bring water to boil. Add the drained rice and cook until it is 70% cooked. Drain the rice and set aside.
3. In a separate large pan, heat ghee or oil over medium heat. Add the sliced onions and sauté until golden brown.
4. Add the ginger-garlic paste and cook for a minute until the raw smell diminishes.
5. Add cumin seeds, bay leaves, cloves, cardamom pods, and cinnamon stick to the pan. Sauté for a minute until aromatic.
6. Add turmeric powder, red chili powder, garam masala, and salt. Stir well to combine the spices.
7. Add the mixed vegetables and cook for a few minutes until they are slightly tender.
8. Reduce the heat to low and mix in the yogurt. Stir continuously until well combined.
9. Layer the partially cooked rice on top of the vegetable mixture. Sprinkle some fried onions, cilantro, and mint leaves on top.
10. Cover the pan with a tight-fitting lid and let it cook on low heat for 15-20 minutes or until the rice is fully cooked and flavors have melded together.
11. Once done, gently fluff the rice with a fork, mixing the vegetables and rice together.
