Here's a simple recipe for making dal, a popular Indian lentil dish:

Ingredients:
- 1 cup split red lentils (masoor dal)
- 3 cups water
- 1 tablespoon ghee or vegetable oil
- 1 teaspoon cumin seeds
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1 green chili, chopped (optional, adjust to taste)
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- Salt to taste
- Fresh cilantro leaves for garnish
- Juice of 1/2 lemon (optional)

Instructions:
1. Rinse the lentils thoroughly under cold water until the water runs clear. Drain and set aside.
2. In a large pot, bring the water to a boil. Add the rinsed lentils and reduce the heat to medium-low. Simmer the lentils, partially covered, for about 20-25 minutes or until they are soft and cooked through. Skim off any foam that forms on the surface while cooking.


3. In a separate pan, heat the ghee or oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant.
4. Add the chopped onions to the pan and sauté until they turn translucent and lightly golden.
5. Stir in the minced garlic, grated ginger, and green chili (if using). Sauté for another minute.
6. Add the turmeric powder, cumin powder, and coriander powder to the pan. Mix well and cook for a minute to toast the spices.
7. Carefully transfer the cooked lentils to the pan with the spice mixture. Be cautious as it might splutter.
8. Stir well to combine the lentils and spices. Add salt to taste and simmer the dal for another 5-10 minutes to allow the flavors to meld together.
9. If the dal seems too thick, you can add some more water to achieve your desired consistency.
10. Remove from heat and garnish with fresh cilantro leaves. Squeeze some lemon juice over the dal for an extra tangy flavor, if desired.
11. Serve the dal hot with steamed rice or naan bread. It can also be enjoyed as a soup or paired with roti or chapati.
